CARAMEL APPLE CIDER CUPCAKES

for an upcoming halloween/housewarming party, i wanted to be imaginative and festive and thought how fun it'd be turn a fall classic into a cupcake. i've done pumpkin cupcakes in the past, so i had to be more creative...so, the idea of the caramel apple cupcake was born. i did some searching around on tastespotting and foodgawker, but was not finding what i was looking for in one recipe. so, i wanted to look for each component separately, starting with the apple cupcake, then a caramel filling, and, finally, a cream cheese frosting. for the apple cupcake, i wanted something with a good apple flavor, but not too warm apple pie like. so, i came across a recipe that didn't use apples at all, rather apple cider, and had very few ingredients, which is always nice. i actually have two variations of the frosting i was able to use: the caramel cream cheese (used at the party) and my go-to cinnamon cream cheese from the pumpkin cupcake recipe i love (which i ended up using for t...

BLUEBERRY MUFFINS WITH CINNAMON CRUMBLE

i have been loving blueberries, nature's candy. i was preparing for an office birthday for my boss and had a sweet little breakfast set up: make-your-own fruit & yogurt parfait, strawberry & blueberry salad, and blueberry muffins, which i thought would be an easy option for those who didn't have time to make a parfait. on my hunt on tastespotting, i found one titled, "cafe-style" and the photo looked tasty. i checked out the ingredients and the recipe and it seemed easy enough. the results looked oh-so professional, but definitely doable. RED VELVET CUPCAKES (AND, BLUE ONES, TOO)

the first time i tried a red velvet, i thought i was in heaven...the sweetness of the cream cheese frosting and the subtle touch of cocoa. red velvet cupcakes have been on my list for awhile of things to make, so when an occasion lent itself...i had to take the opportunity. one of my co-workers just found out what the sex of her baby will be and i thought it'd be fun to make red and blue cupcakes. we have a little poll going on at work and it's dead even between girl v. boy guesses, so for the big reveal on monday morning, i wanted to present her with the appropriate color and the guesser their coordinating cupcake. so, among many recipes on the web, i found this recipe through foodgawker . S'MORES BARS

to redeem my baking skills (my last attempt at pumpkin bars turned into a sheet cake??), i decided i needed to try making another bar. so, on my weekly peruse of TasteSpotting , i was greeted by a decadent image of s'mores bars. the minute i laid eyes on them, i knew i had to make them. for awhile now, i've been craving that gooey, melted chocolate, perfectly toasted marshmallow, crisp, slightly sweet graham cracker goodness and this recipe was not only the easiest thing you'll put together, but it was just what i needed to satisfy the craving. PUMPKIN BAR OR CAKE?

one of my favorite food blogs is TasteSpotting , where i can look at images to decide whether or not i was to try making it. i, myself, have not felt my photos are up to par, but someday i will be up to par! anyway, one of the best things about TS, is that they post images and recipes from other food blogs and i've been able to find a couple others that i love. one of which is called Lovin' From the Oven . kim seems to be a talented, innovative baker, who totally understands what desserts and sweets are all about! i was in the mood to bake, but was looking for a recipe that was easy and that i already had ingredients to. so, i found a recipe for pumpkin bars. i haven't had pumpkin since christmas and once i saw the recipe, i suddenly had a hankering, of course. but, when i was done, i think i'd done something wrong because it had more of the consistency of cake...oh well, it's still delicious! i just wished i had cream cheese so i could frost it. PUMPKIN BARS adap...
