"ICE CREAM CONE" CAKEPOP

i've seen these made before and have been wanting to get more creative with my cakepops. so, i had the opportunity to do just that for my niece's first birthday. it's simple - i made my red velvet cakepops  and put them on ice cream cones instead of a stick. BABY SPRINKLE BAKING MARATHON

sometimes i impress myself! for example, last night i had a baking marathon while intoxicated and everything still turned out well! i was preparing for a baby sprinkle, which is a smaller version of a baby shower for a "seasoned" mom, and took on the task of making sweet treats. i do have to mention that for lent this year, i chose to forgo all sweet treats...so i can only tell you that my treats seemed to get a good response, but i don't know myself. so, i'll trust that my friends weren't just being nice. anyway, so my baking marathon consisted of 6 treats...2 go-tos ( smore's bars & salted chocolate caramel cookies ) and 4 new ones: FUNFETTI CAKE BATTER CHEX BUDDIES these were a favorite fun take on the chex puppy chow aka muddy buddies , but the chocolate & peanut butter is replaced with white chocolate & funfetti cake mix. posted on six sisters' stuff  by camille on february 17, 2012 5 c chex cereal 10 oz vanilla flavored almon...

RED VELVET CHEESECAKE LOLLI-CAKEPOPS

i used to think french macarons were the next cupcake, but i have found something else sprouting up left and right...cakepops! if you thought cupcakes were easy handheld cakes, cakepops are even more portable and not as fragile (except when you're preparing them-see yummy tip below), so you don't have to worry about messing up the frosting. of course, we need to give serious thanks to bakerella for the introduction of this awesome, edible work of art. when i was on the search, i found a great idea for the red velvet cheesecake pops, but the recipe was using a box mix for the red velvet...i really wanted to make my own. so, i found a super tasty, easy recipe for the cake portion. but, i did have to cheat and buy a pre-made cheesecake...sometimes you have to choose your battles. happy valentine's day! enjoy some whoopie...ahem, pie, that is. what a better way to enjoy all the sweet things valentine's day brings? i enjoy baking for others and instead of hauling my cupcake carrier on my 1-mile walk, i needed something lighter and easier to bring to shower my work family. i came across this recipe during my weekly peruse through TasteSpotting and thought that this would be a good opportunity to put my whoopie pan pie to good use. so, find your valentine and enjoy a scrumptious bite. CARAMEL APPLE CIDER CUPCAKES

for an upcoming halloween/housewarming party, i wanted to be imaginative and festive and thought how fun it'd be turn a fall classic into a cupcake. i've done pumpkin cupcakes in the past, so i had to be more creative...so, the idea of the caramel apple cupcake was born. i did some searching around on tastespotting and foodgawker, but was not finding what i was looking for in one recipe. so, i wanted to look for each component separately, starting with the apple cupcake, then a caramel filling, and, finally, a cream cheese frosting. for the apple cupcake, i wanted something with a good apple flavor, but not too warm apple pie like. so, i came across a recipe that didn't use apples at all, rather apple cider, and had very few ingredients, which is always nice. i actually have two variations of the frosting i was able to use: the caramel cream cheese (used at the party) and my go-to cinnamon cream cheese from the pumpkin cupcake recipe i love (which i ended up using for t...

RED VELVET CUPCAKES (AND, BLUE ONES, TOO)

the first time i tried a red velvet, i thought i was in heaven...the sweetness of the cream cheese frosting and the subtle touch of cocoa. red velvet cupcakes have been on my list for awhile of things to make, so when an occasion lent itself...i had to take the opportunity. one of my co-workers just found out what the sex of her baby will be and i thought it'd be fun to make red and blue cupcakes. we have a little poll going on at work and it's dead even between girl v. boy guesses, so for the big reveal on monday morning, i wanted to present her with the appropriate color and the guesser their coordinating cupcake. so, among many recipes on the web, i found this recipe through foodgawker .
